Today, I'm sharing two of my all-time favorite lemony recipes that are super easy, super tasty, and will have your kitchen smelling amazing. So grab a lemon (or two), and let’s get cooking together!
Zesty Lemon Chicken
Okay, first up—Lemon Chicken. This is one of those go-to meals when you want something light, flavorful, and comforting. Plus, it’s the kind of dish that makes you feel like a pro chef even if you’re just winging it in the kitchen.
What You’ll Need:
- 500g boneless, skinless chicken
- Juice and zest of 1 lemon
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional: chopped parsley for a fancy finish
How to Make It:
1. Season the chicken with salt, pepper, and thyme. Let it chill for a few minutes while you prep the sauce.
2. Mix the lemon juice, zest, olive oil, and garlic in a small bowl. That citrus-garlic combo? Absolute magic.
3. Heat a skillet, add a little oil, and cook the chicken until golden and cooked through—about 6–7 minutes per side.
4. Pour in your lemony sauce and let it sizzle for a couple of minutes to soak in all the flavor.

Classic Lemon Squares – Sweet, Tangy, and Totally Addictive
Alright sweet tooths, this one’s for you. Classic lemon squares are that perfect blend of buttery crust and creamy lemon filling. They’re like sunshine in dessert form!
You’ll Need:
For the crust:
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup cold unsalted butter
For the filling:
- 3 eggs
- 1 1/2 cups sugar
- 1/4 cup flour
- 1/2 cup fresh lemon juice
- 1 tsp lemon zest
- Extra powdered sugar for dusting
How to Make It:
1. Preheat the oven to 350°F (175°C). Blend the crust ingredients and press into a baking dish. Bake for 15 minutes until golden.
2. Whisk together the eggs, sugar, flour, lemon juice, and zest. Pour this over the crust and bake another 20–25 minutes.
3. Let it cool (seriously, be patient—it’s worth it), dust with powdered sugar, and slice into squares.
