What makes Arabic pancakes so unique is their texture. Ingredients We’ll Need

For fillings:
- Sweet cheese (ricotta or cream cheese) – 1 cup (200 g)
- Crushed pistachios or walnuts – ½ cup (60 g)
- Sugar – 2 tablespoons (25 g)
- Cinnamon – ½ teaspoon (optional)

Step 1: Preparing the Batter

We start by mixing flour, semolina, yeast, baking powder, and sugar in a bowl. Slowly add warm water while stirring until we get a smooth, runny batter. Cover it and let it rest for about 30 minutes. This step allows bubbles to form, which gives the pancakes their signature honeycomb look.

Step 2: Cooking the Pancakes

Heat a non-stick pan over medium heat. Pour about 2 tablespoons of batter to form a small circle. The pancake will start bubbling almost immediately. We cook it only on one side until no wet batter remains on the surface. The bottom should be golden, while the top stays pale and full of bubbles. Remove and place on a clean towel to keep them soft. Continue until all the batter is used.

Step 3: Making the Syrup

In a small saucepan, combine sugar and water, then bring to a boil. Add a few drops of lemon juice and simmer for about 7 minutes until slightly thickened. For an authentic touch, stir in rose water or orange blossom water. Set aside to cool.

Step 4: Filling and Folding

Place a spoonful of filling—either sweet cheese or a nut mixture—onto the soft side of the pancake. Fold it into a half-moon and pinch the edges to seal. Repeat with the remaining pancakes. Some people like to leave them open like mini cups and fill them with cream and pistachios on top, making them look extra festive.

Step 5: Adding the Sweet Finish

Drizzle the cooled syrup over the pancakes or dip each one lightly for extra sweetness. A final sprinkle of crushed pistachios gives them a bright, colorful finish.
