Today, we’re making homemade crunchy puffed millet granola, layered in glass jars with yogurt or milk, dried fruits, nuts, and topped with fresh mint. This breakfast is healthy, visually appealing, eco-friendly, and easy to customize.
Puffed millet provides a light, crunchy texture, while the nuts and dried fruits add flavor, chewiness, and natural sweetness. Preparing it ourselves also gives us control over ingredients—no added sugar, no unnecessary preservatives, just wholesome goodness.

Ingredients

For the granola:
- 100g puffed millet grains
- 30g almonds (roughly chopped)
- 20g walnuts (roughly chopped)
- 15g sunflower seeds
- 1 tablespoon coconut oil
- 1 teaspoon ground cinnamon
- 30g dried cranberries
- 20g chopped dried apricots
For the jars:
- 500ml plain yogurt (or plant-based yogurt) or 400ml milk (plant-based or dairy)
- Fresh mint leaves for garnish
Optional toppings:
- Honey or maple syrup (1 teaspoon per jar)
- Additional seeds: chia, pumpkin, flax

Step 1: Toast the Millet

1. Preheat the oven to 160°C (320°F).
2. Spread 100g of puffed millet grains evenly on a baking sheet.
3. Toast for 8–10 minutes, stirring halfway through, until the grains smell nutty and feel crisp.
4. Remove from the oven and let them cool slightly.
This step enhances the flavor and gives the millet a satisfying crunch.

Step 2: Toast the Nuts and Seeds

1. In a mixing bowl, combine 30g chopped almonds, 20g chopped walnuts, and 15g sunflower seeds.
2. Add 1 tablespoon of coconut oil and 1 teaspoon of cinnamon. Stir until evenly coated.
3. Spread the mixture on a separate baking sheet and toast in the oven for 5–7 minutes, stirring once halfway.
Toasting the nuts and seeds brings out their aroma and ensures they remain crunchy.

Step 3: Combine Granola Base

1. In a large bowl, mix the toasted millet with the toasted nuts and seeds.
2. Let the mixture cool completely for 5–10 minutes.
3. Fold in 30g dried cranberries and 20g chopped dried apricots.
Now we have a crunchy, nutty, and slightly sweet granola base ready to use.

Step 4: Assemble the Breakfast Jars

1. Choose clear glass jars for presentation and eco-friendly storage.
2. Add a layer of yogurt (approximately 2–3 tablespoons) at the bottom of each jar.
3. Add 2–3 tablespoons of granola on top of the yogurt.
4. Add a few pieces of dried fruit for extra flavor and color.
5. Repeat the layering until the jar is nearly full, leaving some space at the top.
6. Optionally, drizzle 1 teaspoon of honey or maple syrup over the top layer.
7. Finish by garnishing with a fresh mint leaf.
Each jar is now visually appealing, nutritious, and ready to eat.

Step 5: Serve or Store

- Serve immediately for a crunchy texture, or refrigerate overnight for softer granola layers.
- If using milk instead of yogurt, pour it into the jar and layer with granola and dried fruits.
- Leftover granola can be stored in an airtight container for up to 1 week to maintain crunchiness.
