3. Keep the whipped cream in the fridge until ready to assemble.
Step 4: Prepare the Strawberries
1. Wash 300g strawberries and briefly soak them in lightly salted water to remove impurities.
2. Slice them thinly for neat stacking. Avoid dicing, as small cubes do not look as elegant when layered.
3. Pat dry with a paper towel.
Step 5: Assemble the Mille-Feuille
1. Place one pastry layer on a flat plate.
2. Spread a thin, even layer of whipped cream.
3. Arrange a layer of strawberry slices on top.
4. Add another layer of cream over the strawberries.
5. Place the next pastry layer on top and repeat the process until all layers are stacked.
6. For the top layer, use a well-shaped pastry. Optional: lightly spread cream around the edges and press finely chopped pastry strips to cover uneven parts.
7. Smooth the top and edges with a thin layer of cream for a clean, polished finish.
Step 6: Chill and Serve
1. Place the assembled mille-feuille in the fridge for 3–4 hours to fully set.
2. Decorate with extra strawberry slices or a light dusting of sugar if desired.
