Ingredients for the Pie

For the crust (6-inch pie):
- Low-gluten flour: 155 g
- Unsalted butter: 60 g, softened
- Water: 45 g, room temperature
- Sugar substitute or white sugar: 10 g
For the apple filling:
- Apples, peeled and diced: 300 g
- Butter: 10 g
- Sugar substitute or white sugar: 28 g
- Salt: 1 g
- Cinnamon powder (optional): ½ teaspoon
- Starch: 10 g
- Water for starch: 30 g
For decoration and shine:
- Whole egg liquid: a small amount for brushing

Step 1: Making the Pie Dough

1. Take the softened butter and put it into a bowl.
2. Sift the flour into the bowl, then add sugar.
3. Use our hands to rub the butter and flour together until it forms small crumbs.
4. Slowly add water in small portions while mixing gently. Stop when a smooth dough forms.
5. Wrap the dough in plastic wrap and refrigerate for 10 minutes to relax.
Tip: Adding water slowly helps control dough consistency. We don’t want it sticky.

Step 2: Preparing the Apple Filling

1. Heat 10 g butter in a pan over medium-low heat until melted.
2. Add the diced apples and a few drops of lemon juice to prevent browning.
3. Stir gently a few times, then add 28 g sugar and continue cooking. The apples will release water.
4. Mix 10 g starch with 30 g water until smooth. Pour this into the pan and stir continuously.
5. Cook until the apples start to clump and the filling becomes slightly sticky.
6. Turn off the heat. Add 1 g salt and optional ½ teaspoon cinnamon. Stir to combine.
7. Let the filling cool completely before assembling the pie.
Tip: Stir constantly when adding starch to prevent lumps.

Step 3: Shaping the Pie Base

1. Remove the chilled dough from the fridge. Set aside 1/3 for the top lattice.
2. Roll the remaining dough into a circle slightly larger than the 6-inch pan.
3. Gently press it into the pan to fit snugly.
4. Use a fork to poke small holes in the base—this stops puffing during baking.

Step 4: Filling and Lattice Top

1. Spoon the cooled apple filling evenly into the pie crust.
2. Cut the reserved dough into strips of similar width for weaving.
3. Lay two strips in a cross, then continue weaving, lifting and placing strips over each other.
4. Once the lattice is complete, brush the top with a small amount of whole egg liquid.
Tip: Keep the strips uniform in width for a neat, professional look.

Step 5: Baking the Pie

1. Preheat the oven to 200°C (392°F).
2. Bake the pie for 15 minutes at this temperature.
3. Reduce heat to 180°C (356°F) and bake for another 15 minutes.
4. Watch the crust in the last few minutes; if it browns too fast, cover loosely with foil.

Step 6: Cooling and Enjoying

1. Remove the pie from the oven and carefully take it out of the pan.
2. Place it on a wire rack to cool slightly.
3. Cut into slices and enjoy the crispy crust with the soft, sweet apple filling.
