Green Feta Pasta

This kind of pasta works especially well when You want something satisfying but do not want to spend the evening stuffing individual shells or making a complicated filling.
Medium pasta shells do most of the work themselves, catching pockets of sauce and crumbled feta in every bite.
What You’ll Need
For the pasta:
Medium pasta shells
Feta cheese
Olive oil
Salt and black pepper
For the green sauce:
Kale
Garlic
Olive oil
Pasta cooking water
Lemon juice
Optional fresh herbs such as parsley or basil
For serving:
Extra feta
Lemon zest
Black pepper
1. Start With the Pasta
Medium shells are ideal here because they naturally hold sauce and cheese. Cook them in well-salted water until just shy of al dente. They should still have a little firmness in the centre because they will continue cooking in the oven.
Before draining, save some of the pasta water. That starchy liquid will help loosen the green sauce and make it cling more easily to the shells.
Tip: do not overcook the pasta at this stage. Soft shells can become too delicate after baking.
2. Make the Green Sauce
Kale gives the sauce its deep colour and slightly earthy flavour. Cook it until tender, then blend it with garlic, olive oil, a splash of pasta water, and a little lemon juice. The goal is a smooth sauce that is thick enough to coat the pasta but still loose enough to spread easily across the baking dish. If it feels too thick, add more pasta water a tablespoon at a time. You can also mix in parsley or basil for a fresher flavour.
Best texture: silky and pourable, not stiff or watery.
3. Let the Feta Do the Work
The clever part of this recipe is that there is no need for a complicated cheese filling. Instead of stuffing each shell individually, simply crumble feta generously over and around the pasta. Some pieces will fall inside the shells, while others will remain on top. As the pasta bakes, the feta softens and becomes creamier while keeping its characteristic tangy, salty flavour. Because feta is naturally salty, always taste the sauce before adding extra salt.
Tip: use larger crumbles rather than breaking the feta too finely. They create better pockets of cheese throughout the dish.
4. Assemble the Dish
Spread most of the green sauce across the bottom of a baking dish. Add the cooked shells and gently toss them through some of the sauce so they are lightly coated.
Scatter the feta over the pasta, making sure some cheese reaches inside the shells. Spoon the remaining green sauce around the edges and over any areas that look dry. The pasta will absorb some moisture in the oven, so the dish should look slightly saucier before baking than You think it needs to be.
5. Bake Until Hot and Creamy
Transfer the dish to a hot oven and bake until everything is heated through and the edges begin to bubble. The feta will soften rather than melt into long strings, which is exactly what You want.
A few lightly browned spots on top add extra flavour, but there is no need to wait for a heavy crust. Once baked, let the pasta rest for several minutes before serving. This gives the sauce time to settle and cling more evenly to the shells.
6. Finish With Something Fresh
A rich pasta like this benefits from a bright finishing touch. Add fresh lemon zest, a squeeze of lemon juice, black pepper, or a handful of chopped herbs just before serving.
For more texture, toasted walnuts, pine nuts, or seeds work well on top. You can also serve the pasta with a simple salad dressed with lemon and olive oil.
Serve it with: leafy greens, roasted broccoli, or a crisp cucumber salad.
Make It Your Own
The basic idea is easy to adapt.
Replace some of the kale with spinach for a softer flavour, or add broccoli for a thicker green sauce. You can also mix roasted zucchini or peas into the pasta before baking.
If You want the dish to feel even more substantial, add white beans or shredded chicken. The main structure stays the same: shells, green sauce, feta, and a short bake in the oven. This is the kind of recipe worth keeping for busy evenings: simple ingredients, very little hands-on work, and enough flexibility to use whatever greens You already have in the kitchen.
