A good sandwich rarely needs to be complicated, but vegetarian versions can be surprisingly easy to get wrong. Too many soft ingredients and everything becomes soggy; too few fillings and lunch feels more like a snack.
This Veggie Club Sandwich solves both problems. Inspired by classic double-decker sandwiches, it keeps the generous three-slice structure but swaps meat and vegetables, sharp cheese, creamy hummus and a punchy giardiniera mayonnaise.
The best part? It takes only 15 minutes from start to finish.

Ingredients

⅓ cup finely chopped Italian-style vinegar giardiniera
1 Tbsp. giardiniera brine, plus more if needed
⅓ cup mayonnaise
5 oz. cucumber, about 1 small cucumber, or about 8 radishes — or a combination of both
Kosher salt, if needed
3 slices multigrain or rye sandwich bread
2 oz. butter lettuce, such as Bibb or Boston
2 Tbsp. hummus
2 oz. thinly sliced white cheddar or provolone

Step 1: Make the Giardiniera Mayo

Finely chop the giardiniera and combine ⅓ cup of it with ⅓ cup mayonnaise in a small bowl.
Mix until the pickled vegetables are distributed evenly through the mayonnaise, then set it aside.
This spread provides much of the sandwich’s flavor, so a sharp, pleasantly acidic giardiniera works particularly well.

Step 2: Dress the Vegetables

Trim the cucumber, radishes or both, then slice them very thinly.
Place the vegetables in a bowl and toss with 1 Tbsp. of giardiniera brine.
Taste before adding salt because the brine may already provide enough seasoning. If you want a stronger acidic kick, add another small splash of brine.
Tip: Do not leave the vegetables sitting in the brine for too long before assembling the sandwich. You want them seasoned but still crisp.

Step 3: Build the First Layer

Lightly toast the three slices of bread and allow them to cool before assembling. Cooling matters because warm bread can soften the lettuce and loosen the mayonnaise.
Spread roughly one third of the giardiniera mayo — around 3 Tbsp. — over the first slice.
Arrange half of the dressed vegetables across the bread in overlapping layers. Add approximately 1 oz. of butter lettuce, then spoon half of the remaining giardiniera mayo over the lettuce.

Step 4: Prepare the Second Layer

Take another slice of toasted bread and spread it with 2 Tbsp. hummus.
Layer the 2 oz. of white cheddar or provolone over the hummus, followed by the remaining cucumber and radish mixture.
Finish with the remaining butter lettuce.
The hummus does more than add flavor here. Its thick texture helps hold the cheese and vegetables in place, which is especially useful in a sandwich this tall.

Step 5: Stack the Club

Place the hummus-covered slice, lettuce side facing upward, on top of the first sandwich layer.
Spread the remaining giardiniera mayo over the final slice of toast and place it mayo side down on top.
At this point, the sandwich will be generously filled, so secure it with two to four long toothpicks before cutting. Slice it in half for a substantial lunch or into quarters for a classic club-sandwich presentation.

Easy Ways to Customize It

The recipe is flexible enough to adjust without losing its character. For extra creaminess, add a few thin avocado slices. If you prefer more heat, choose a spicy giardiniera or mix a little chili sauce into the mayonnaise.
Provolone provides a softer, slightly milder flavor, while sharp white cheddar creates more contrast with the acidic vegetables.
You can also use both cucumber and radish rather than choosing between them. The cucumber adds freshness while the radish provides a pepperier crunch.
For bread, rye gives the sandwich a stronger savory character, while multigrain keeps it slightly nuttier and more neutral.

Serving Tip

This sandwich is filling enough to stand on its own, but it also works well with a simple green salad, fresh fruit or a handful of crisp potatoes on the side.
The most important thing is to eat it soon after assembling it. The combination of toasted bread, crunchy vegetables and creamy spreads is at its best before the brine has time to soften the layers.
