Crispy Green Prawn Crackers

· Cate team
Green prawn crackers are a fun homemade snack with a crisp texture, savory seafood flavor, and naturally colorful appearance. Making them from scratch takes more time than opening a packet, but the process is surprisingly straightforward.
A mixture of prawn, tapioca starch, herbs, and seasonings is shaped, steamed, chilled, sliced, dried, and finally cooked until it puffs. The result is a light and crunchy snack that can be served on its own or paired with a favorite dipping sauce.
What Makes Green Prawn Crackers Green?
The green color in this recipe comes from fresh herbs rather than artificial coloring. Coriander leaves and spring onions add a fresh green tone while also contributing mild flavor. The final shade will depend on the amount of herbs used and how finely they are blended.
Tapioca starch is particularly important because it helps create the characteristic crisp and airy texture. When the dried slices are exposed to hot oil, moisture inside the starch mixture turns into steam, causing the pieces to expand rapidly.
Ingredients
250 g peeled raw prawns
200 g tapioca starch
50 ml cold water
2 cloves garlic
3 tablespoons chopped spring onions
2 tablespoons chopped coriander leaves
1 teaspoon salt
½ teaspoon ground white pepper
1 teaspoon sugar
1 tablespoon vegetable oil
Oil, for deep-frying
Preparation time: About 30 minutes
Steaming time: About 45 minutes
Drying time: 1–2 days, depending on conditions
Cooking time: A few minutes per batch
Preparing the Prawn Mixture
Start by making sure the prawns are clean and well drained. Excess water can make the mixture difficult to shape, so pat them dry with kitchen paper before processing.
Place the prawns, garlic, spring onions, coriander leaves, salt, white pepper, sugar, and vegetable oil in a food processor. Blend until the mixture becomes smooth and fairly uniform.
Transfer the mixture to a bowl and gradually add the tapioca starch. Add the cold water little by little while mixing. The finished mixture should be firm enough to shape into a log without becoming excessively sticky.
Instructions
1. Blend the prawns, garlic, spring onions, coriander leaves, salt, pepper, sugar, and vegetable oil until smooth. Mix in the tapioca starch and gradually add the cold water until a firm dough forms.
2. Shape the dough into two compact logs. Steam for about 45 minutes, then cool completely and refrigerate until firm.
3. Slice the chilled logs as thinly and evenly as possible. Arrange the slices on a tray and dry thoroughly for 1–2 days, turning them occasionally.
4. Heat oil in a deep pan. Fry the dried slices in small batches until they puff up and become crisp.
5. Drain on paper towels, allow to cool slightly, and serve with your preferred dipping sauce.
Tips for Better Crackers
The thickness of the slices can make a noticeable difference. If they are too thick, they may not expand as easily and can have a harder texture. Using a sharp tools and cutting slowly can help create more consistent pieces.
Drying is another important stage. The slices should be completely dry before frying. Any remaining moisture can affect how they expand and may cause hot oil to splatter. For that reason, take time to dry the pieces thoroughly rather than rushing this step.
Avoid placing too many slices into the pan at once. They expand considerably during cooking, so giving each piece enough room makes it easier to cook them evenly.
If fresh coriander is not preferred, it can be replaced with additional spring onions for a milder green color and flavor. The recipe can also be divided into smaller portions and the dried slices stored in an airtight container until needed.
Serving Ideas
Freshly cooked green prawn crackers are best enjoyed after they have cooled for a few minutes and become fully crisp. They can be served as a simple snack or placed in a bowl alongside a meal.
A sweet chili dipping sauce works well with their savory flavor, while a mild cucumber or herb dip can provide a fresher contrast. For a simple presentation, serve the crackers in a large bowl and add a few fresh herbs around the edges.
Homemade green prawn crackers require patience, particularly during the steaming and drying stages, but the cooking process itself is manageable. Once the dried crackers are prepared, they can be cooked in minutes whenever a freshly made crunchy snack is wanted.
