Autumn baking becomes especially inviting when pumpkin, warm spices and vanilla fill the kitchen with comforting aromas. These pumpkin oatmeal cookies combine the gentle sweetness of pumpkin purée with the hearty texture of rolled oats, creating a wonderfully soft dessert.
A smooth vanilla glaze adds the finishing touch, making each cookie look as appealing as it tastes. The recipe is ideal for seasonal celebrations, homemade gifts or simply enjoying with a warm cup of tea.

Why These Cookies Are So Delicious

Pumpkin purée gives the cookies a tender, moist texture, while oats provide a satisfying bite. Cinnamon-forward pumpkin spice adds warmth, and a combination of white and brown sugars creates a rich sweetness.
The vanilla glaze is particularly important. Made with icing sugar, milk and vanilla, it forms a delicate coating that sets beautifully on the cooled cookies.
Vanilla bean paste produces attractive dark specks and a more pronounced vanilla flavour. However, good-quality vanilla extract works equally well.
The result is a batch of soft, fragrant cookies with a gently spiced centre and a sweet, creamy finish.

Ingredients For Pumpkin Oatmeal Cookies

For the cookies:
2 cups (240 g) plain flour
2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp kosher salt
1 cup (226 g) unsalted butter, melted
1 cup (200 g) granulated sugar
½ cup (107 g) light brown sugar, firmly packed
¾ cup (170 g) pumpkin purée
1 tsp vanilla bean paste or vanilla extract
2 cups (178 g) traditional rolled oats
For the vanilla glaze:
1½ cups (170 g) icing sugar
2 tbsp whole milk, plus extra if needed
1 tsp vanilla bean paste or vanilla extract

How To Prepare The Cookie Dough

Step 1: Prepare the oven.
Preheat the oven to 175°C (350°F). Position the oven racks in the upper and lower thirds, then line two baking trays with parchment paper.
Step 2: Combine the dry ingredients.
In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda and salt until evenly distributed.
Step 3: Mix the wet ingredients.
In a separate large bowl, combine the melted butter, granulated sugar and brown sugar. Whisk until blended, then add the pumpkin purée and vanilla.
Step 4: Finish the dough.
Gradually fold the dry ingredients into the pumpkin mixture using a spatula. When only a few traces of flour remain, add the rolled oats and gently mix until incorporated.
Avoid excessive mixing, which can affect the cookies' tenderness.

Baking The Perfect Pumpkin Cookies

Using a large cookie scoop, divide the dough into portions of approximately three tablespoons each.
Arrange them on the prepared trays, leaving about 5 cm between cookies.
Bake for 13–15 minutes, switching the trays between oven racks and rotating them halfway through.
The cookies are ready when their tops and edges have set.
Allow them to rest on the trays for five minutes before transferring them to wire racks. Leave them until completely cool.

How To Make The Vanilla Glaze

Combine the icing sugar, whole milk and vanilla in a medium bowl. Stir until smooth and creamy.
The glaze should have a consistency similar to double cream. If it seems too thick, add additional milk, half a teaspoon at a time.
Using the back of a spoon, spread a thin layer over each cooled cookie.
The glaze may initially appear quite thick, but this helps it remain on top rather than running down the sides.
Leave the decorated cookies undisturbed for approximately one hour, allowing the coating to set.

Storage And Serving Tips

These cookies are especially enjoyable once the glaze has completely set, revealing their soft oatmeal texture beneath the sweet vanilla topping. For a seasonal presentation, arrange them on a serving plate with cinnamon sticks and small decorative pumpkins. The finished cookies can also be prepared up to three days in advance. Store them in an airtight container in the refrigerator to preserve their freshness.
With their comforting spices, delicate pumpkin flavour and creamy glaze, these homemade cookies are a delightful addition to any autumn baking collection.
