Caesar salad and devilled eggs might seem like an unusual pairing, but they share several ingredients that make this combination surprisingly natural. Both rely on rich, creamy textures, sharp seasoning and a little acidity to keep the flavours balanced.
In this recipe, the traditional egg yolk filling takes inspiration from Caesar dressing.
Garlic, Dijon mustard, lemon juice and finely chopped anchovies create a savoury mixture, while Parmesan adds a distinctive richness. Instead of serving everything with a bowl of lettuce, each egg receives a tiny green garnish and a scattering of toasted breadcrumbs.
The finished appetisers are small enough to enjoy in a couple of bites, yet full of flavour. They are particularly useful when preparing food for guests because most of the work can be completed ahead of time.
Preparation time: 20 minutes
Cooking time: 20 minutes
Total time: Approximately 45 minutes
Servings: 12
Ingredients
12 large eggs
80g mayonnaise
2 anchovy fillets, finely chopped
2 garlic cloves, finely grated
2 tbsp Dijon mustard
2 tsp fresh lemon juice
2 tbsp finely grated Parmesan
15g panko breadcrumbs
10g unsalted butter
2 romaine lettuce leaves
Salt and freshly ground black pepper, to taste
Cook The Eggs Carefully
Bring a large saucepan of water to a gentle boil. Lower the eggs into the water using a spoon, taking care to prevent them from breaking. Reduce the heat slightly and simmer for approximately 11–12 minutes. This produces firm yolks that can be mashed into a smooth filling. While the eggs cook, fill a bowl with cold water and ice. Transfer the cooked eggs directly into the bowl and leave them for at least five minutes. Once cool enough to handle, gently tap the shells and peel them. Slice each egg lengthways, then remove the yolks without damaging the whites. Arrange the empty halves on a plate and set aside.
Build The Caesar Flavour
Place the yolks in a mixing bowl and crush them with a fork until no large pieces remain.
Stir in the mayonnaise, anchovies, garlic, mustard and lemon juice. Mix thoroughly until the filling becomes creamy and evenly combined.
For a particularly delicate texture, pass the yolks through a fine sieve before adding the remaining ingredients.
Taste the mixture before seasoning. Anchovies and mustard already contribute considerable flavour, so only a little additional salt may be necessary.
The filling should be thick enough to hold its shape when spooned into the egg whites.
Add A Golden Crunch
Melt the butter in a small frying pan over a medium heat. Add the panko breadcrumbs and stir regularly for three to five minutes, until they turn golden.
Transfer them to a plate immediately to prevent further browning.
Cut the romaine lettuce into small pieces that will fit neatly on top of the eggs.
Spoon or pipe the Caesar filling into the prepared whites. Sprinkle with Parmesan and toasted breadcrumbs, then finish each portion with a little lettuce.
Make Every Bite Better
The contrast between the smooth filling and crisp topping is what gives these eggs their character. Assemble them shortly before serving so the breadcrumbs remain crunchy and the lettuce stays fresh.
For a brighter flavour, add a few extra drops of lemon juice. If the mustard seems too pronounced, a small spoonful of mayonnaise will soften its sharpness.
Serve the eggs chilled on a wide platter, leaving enough space for guests to pick them up easily.
Prepare Ahead Without Stress
The eggs can be boiled, peeled and halved a day in advance. Keep the whites and prepared filling in separate covered containers in the refrigerator.
Toast the breadcrumbs ahead of time and store them separately once completely cooled.
Assemble the appetisers shortly before serving, adding the lettuce and crunchy topping last. Refrigerate promptly and consume prepared leftovers within two days.
These Caesar-inspired eggs bring an interesting new flavour to a traditional appetiser, with enough freshness and texture to make them stand out on any sharing table.
