Autumn desserts have a particular charm, especially when they combine comforting flavours with an unusual presentation. Pumpkin churros offer a playful variation on the traditional Spanish-inspired treat, featuring crisp exteriors, soft centres and a coating of warmly spiced sugar.
Their miniature pumpkin shapes make them particularly appealing for seasonal gatherings. Although the preparation involves a little patience, the ingredients are familiar, and the cooking process is surprisingly straightforward.
The secret to keeping the decorative shapes intact is freezing the piped dough before frying. Once cooked, the churros can be enjoyed warm with caramel or chocolate sauce.

What Makes Pumpkin Churros Special?

Traditional churros are made from a simple dough that becomes wonderfully crisp when fried. This autumn-inspired version incorporates pumpkin purée directly into the mixture, giving the finished dessert a subtle sweetness and a softer texture.
Instead of using cinnamon alone, the sugar coating combines several warming spices. Cinnamon, ginger, nutmeg and cloves complement the pumpkin flavour without overwhelming it.
A piping bag fitted with a large star-shaped nozzle creates the characteristic ridged surface, helping the churros develop their golden crust.
For the decorative pumpkin shapes, the dough must be frozen until firm before frying.

Ingredients For Pumpkin Churros

Servings: 12
Preparation time: 10 minutes
Total time: Approximately 2 hours
For the dough:
180g pumpkin purée
85g unsalted butter
180ml water
25g caster sugar
1 teaspoon vanilla extract
150g plain flour
1 teaspoon salt
½ teaspoon pumpkin pie spice
2 large eggs
Vegetable oil, for deep-frying
For the coating and serving:
200g caster sugar
2 teaspoons pumpkin pie spice
Caramel sauce, for dipping
Pumpkin pie spice can be prepared by combining ground cinnamon with smaller amounts of ginger, nutmeg and cloves.

How To Make Pumpkin Churros

Step 1: Prepare the dough.
Combine the pumpkin purée, butter, water and 25g sugar in a saucepan. Bring to a gentle boil over a medium heat, then stir in the vanilla extract.
Remove from the heat and immediately add the flour, salt and ½ teaspoon pumpkin spice.
Return the saucepan to a low heat and stir for approximately two minutes until the mixture forms a thick dough. Allow it to cool for 10 minutes.
Step 2: Add the eggs.
Using an electric mixer, beat the eggs into the slightly cooled dough, adding them individually.
Transfer the mixture into a piping bag fitted with a large open-star nozzle.
Step 3: Shape and freeze.
Line two baking trays with baking parchment. Pipe small pumpkin outlines, adding a short stem to each shape.
Freeze for at least 45 minutes, until completely firm. This prevents the decorative shapes from falling apart during frying.
Step 4: Fry until golden.
Heat vegetable oil in a deep, heavy-based saucepan to 175°C.
Carefully lower three or four frozen churros into the oil, depending on the saucepan's size.
Fry for six to seven minutes, turning halfway through, until evenly golden.
Remove with a slotted spoon and drain briefly on kitchen paper.
Step 5: Add the coating.
Combine the remaining sugar and pumpkin spice in a shallow bowl.
While the churros are still warm, roll them in the mixture until completely coated.

Tips For Perfect Results

Avoid overfilling the saucepan, as this can lower the oil temperature and prevent the churros from becoming crisp. If creating pumpkin shapes feels too complicated, pipe traditional churro strips directly into the hot oil instead. This also eliminates the freezing stage.
For the best texture, serve immediately after coating. Warm caramel sauce provides a smooth, sweet contrast to the lightly spiced, crunchy exterior. These homemade pumpkin churros are an inviting seasonal dessert, combining familiar autumn flavours with a charming presentation.
