A Delicious Meat-Free Pasta

· Cate team
A satisfying pasta dinner doesn't need meat, expensive ingredients or hours of cooking. This plant-based walnut Bolognese combines mushrooms, vegetables and nuts to create a rich tomato sauce with a wonderfully hearty texture.
Ready in around 20 minutes, the recipe is naturally dairy-free and vegan. When served with gluten-free spaghetti, it also makes an excellent option for anyone avoiding gluten.
The secret lies in finely chopping the vegetables and walnuts until they resemble traditional mince. Mushrooms provide a savoury depth, while walnuts contribute richness and a pleasantly firm texture.
Why This Meat-Free Sauce Works
The combination of mushrooms, walnuts, carrots and onions creates a substantial sauce without complicated meat substitutes.
Mushrooms contain naturally occurring compounds responsible for umami, the savoury flavour commonly associated with slow-cooked dishes. Walnuts add texture and help make the finished meal more filling.
Carrots provide gentle sweetness, balancing the acidity of the tomatoes, while garlic and oregano introduce familiar Italian-inspired flavours.
A little balsamic vinegar adds further depth, making the sauce taste richer despite its relatively short cooking time.
Unlike many traditional Bolognese recipes, this version requires no lengthy simmering, making it particularly convenient for busy evenings.

How To Make Walnut Bolognese
Step 1: Prepare the vegetable mixture.
Place the mushrooms, carrot, onion, garlic and walnuts in a food processor. Pulse briefly until everything resembles coarse minced meat.
Avoid blending the ingredients into a smooth paste. Small pieces are essential for creating the sauce's satisfying texture.
Step 2: Cook the vegetables.
Heat the olive oil in a large frying pan over a medium heat.
Add the chopped mixture, oregano, salt and black pepper. Cook for approximately five minutes, stirring occasionally until the vegetables begin to soften.
Step 3: Build the flavour.
Stir in the tomato purée and balsamic vinegar.
Continue cooking for another five minutes, allowing the tomato purée to develop a deeper, more concentrated flavour.
Step 4: Simmer the sauce.
Add the chopped tomatoes. Half-fill the empty tin with water, swirl it around and pour the liquid into the pan.
Bring to a gentle simmer, cover and cook over a low heat for approximately 10 minutes.
Step 5: Cook the spaghetti.
Meanwhile, boil the pasta in generously salted water according to the packet instructions.
Transfer the cooked spaghetti directly into the sauce using tongs, allowing a little starchy cooking water to accompany it.
Toss thoroughly until the pasta is evenly coated.
Tips For The Best Results
The most important detail is preserving the slightly chunky consistency of the mushroom and walnut mixture.
If the sauce becomes too thick, add a small amount of reserved pasta water to loosen it.
Gluten-free spaghetti works particularly well, although regular pasta can be substituted if gluten is not a concern. Finish with freshly torn basil and additional black pepper.
Serve immediately while the sauce is warm and glossy. The combination of savoury mushrooms, crunchy walnuts and fragrant herbs creates a comforting, family-friendly dinner with surprisingly little effort.
