Masala Chickpea Fritters

· Cate team
Masala chickpea and parsnip fritters are a flavorful option for lunch, dinner, or a shared snack. Mashed chickpeas provide a hearty base, while grated parsnips add a gentle sweetness.
Warm spices bring depth to the mixture, and a crisp outer layer contrasts nicely with the soft center. A coconut sambol served alongside adds tanginess, a little heat, and a fresh finish.
The recipe is straightforward to prepare at home, using a mixing bowl, a frying pan, and a few everyday ingredients. The fritters are shaped into small patties before cooking, making them easy to serve individually. For the best texture, keep the mixture firm enough to handle without making it too dry.

400 g cooked chickpeas, drained
250 g parsnips, peeled and coarsely grated
100 g ricotta
1 small onion, finely chopped

Instructions
1. Prepare the chickpeas. Drain the cooked chickpeas thoroughly and place them in a large bowl. Mash with a fork until most of the chickpeas are broken down, leaving a few small pieces for texture.
2. Prepare the vegetables. Peel and coarsely grate the parsnips. Finely chop the onion, mince the garlic, and grate the ginger. Remove excess moisture from the parsnips when they seem particularly wet.
3. Mix the fritter ingredients. Add the grated parsnips, onion, garlic, ginger, ricotta, garam masala, crushed coriander seeds, flour, baking powder, and chopped coriander to the mashed chickpeas. Season with salt and black pepper.
4. Form the patties. Stir everything until the mixture holds together. Divide it into six portions and shape each portion into a flat patty. Press gently around the edges to help them stay intact during cooking.
5. Heat the frying pan. Pour a thin layer of vegetable oil into a large frying pan and place it over medium heat. Wait until the oil is hot before adding the patties.
6. Cook the fritters. Fry the patties in batches for approximately 7–8 minutes in total, turning carefully so both sides become golden and crisp. Avoid crowding the pan, and adjust the heat when the outside browns too quickly.
7. Prepare the coconut mixture. Place the chilies, garlic, and vegetable oil in a blender or food processor. Blend into a coarse paste. Use less chili for a milder sambol.
8. Toast the coconut. Add the desiccated coconut to a dry saucepan and toast gently, stirring regularly until lightly golden. Transfer it to a bowl and set aside.
9. Cook the sambol. In the same saucepan, toast the black mustard seeds briefly until fragrant. Add the chili-garlic paste and cook for a short time, stirring frequently. Add the toasted coconut and water, then stir in the brown sugar, tomato purée, lime juice, lime zest, and salt.
10. Finish the sambol. Simmer gently until the mixture becomes moist and well combined. Add a little water when necessary to prevent it from drying out. Taste and adjust the lime juice or seasoning.
11. Plate and serve. Arrange the warm fritters on a serving plate. Add a spoonful of coconut sambol and plain yogurt, then finish with fresh coriander leaves and lime wedges. Serve immediately while the fritters remain crisp.
Tips for Better Results
Drain the chickpeas well and avoid adding too much flour, which can make the patties dense. The ricotta helps create a softer center, while the baking powder gives the mixture a lighter texture. Shape the patties evenly so they cook at a similar rate. Prepare the sambol while the fritters cook to save time. Keep the pan at medium heat, since excessive heat can brown the outside before the centers are properly heated. For extra freshness, add the lime juice gradually until the sambol has the balance of flavor you prefer.
Masala chickpea and parsnip fritters combine hearty legumes, sweet root vegetables, and warming spices in a simple homemade dish. Their crisp surfaces pair well with the tangy coconut sambol and cool yogurt. Serve them as a snack or build a more substantial meal with rice or flatbread for a satisfying finish.
