A good rice dish can make an everyday meal feel a little more special, especially when everything cooks together in one pan.
Chicken and broad bean pilaf combines tender chicken, fluffy rice, green vegetables, and aromatic seasonings to create a balanced dish that is both filling and convenient.

Chicken and Broad Bean Pilaf

Ingredients:
300 g boneless chicken, cut into bite-sized pieces
200 g long-grain rice
150 g broad beans, fresh or frozen
1 small onion, finely chopped
2 garlic cloves, crushed
1 tablespoon vegetable oil
½ teaspoon ground cumin
½ teaspoon ground coriander
A pinch of ground turmeric
500 ml chicken stock
Salt and ground black pepper, to taste
2 tablespoons chopped fresh parsley
A little lemon juice, optional

Preparation and Cooking Instructions

1. Rinse the rice in cool water until the water becomes clearer. Drain it thoroughly and set it aside. This helps remove some surface starch and can make the cooked grains less sticky.
2. Prepare the remaining ingredients. Chop the onion, crush the garlic, cut the chicken into evenly sized pieces, and measure the broad beans and seasonings.
3. Place a large, heavy-based pan over medium heat and add the vegetable oil. Once warm, add the chicken pieces in a single layer. Cook for several minutes, turning them occasionally until the outside is lightly browned. Transfer the chicken to a plate.
4. Add the chopped onion to the same pan and cook until softened. Stir in the crushed garlic, ground cumin, ground coriander, and turmeric. Mix for about 30 seconds so the seasonings release their aroma.
5. Add the drained rice and stir gently, allowing the grains to become coated with the onion and spice mixture. Return the chicken to the pan and distribute it evenly through the rice.
6. Pour in the chicken stock and season with salt and black pepper. Stir once to combine, then bring the liquid to a gentle simmer. Avoid stirring repeatedly once the rice begins cooking, as this can make the grains break apart.
7. Cover the pan with a tight-fitting lid and reduce the heat to low. Cook for approximately 10 minutes, then add the broad beans and spread them evenly over the rice. Cover again and continue cooking until the rice is tender and the chicken is thoroughly cooked.
8. Remove the pan from the heat and leave it covered for five minutes. Fluff the rice gently with a fork, scatter over the chopped parsley, and add a little lemon juice if desired. Serve warm.

Tips for Fluffy Rice

The amount of liquid and the cooking temperature are important when making pilaf. Keep the heat low after the liquid begins to simmer. Strong heat can cause the bottom of the rice to cook too quickly while the upper grains remain firm. Try not to lift the lid too often. Keeping the steam inside helps the rice cook evenly. If the grains are still firm after the suggested cooking time, add a small amount of hot stock or water, cover the pan, and continue cooking gently.

Serving and Storage Ideas

Serve the pilaf in a wide dish with extra parsley scattered over the top. A simple cucumber salad or lightly dressed leafy vegetables can provide a fresh contrast to the warm rice. If you have leftovers, allow them to cool promptly and place them in a covered container in the refrigerator. Reheat thoroughly until steaming hot, adding a small splash of water if the rice seems dry. Avoid reheating the same portion more than once.
Chicken and broad bean pilaf is a practical way to combine rice, vegetables, and chicken in one satisfying meal. The gentle spices create a fragrant base, while the broad beans add color and a pleasant texture. With a little preparation and careful heat control, this one-pan recipe can become a dependable option for everyday cooking.
